- One t-spoon rock salt

- ¼ cup ararout
- 1 cup roasted flour
- Ghee (for the frying purpose)
To make the stuffing
- Two tablespoons of ghee
- Two teaspoons of rock salt
- Two teaspoons of coriander
- One tablespoon of cumin seeds
- ¾ of chili powder
- Chironji (Put around 125 grams of chironji in water and douse it for approximately 2 hours)
Step by Step Recipe of Water chestnuts
To prepare the stuffing of water chestnut samosa
- Peel the “Chironji” and mix it in the mixer.
- Heat two tablespoons of ghee in a pan.
- Now put the cumin seeds in it.
- When it starts to crack, put chironji and other stuffing material into it.
Roast the mixture on the medium flame. And then keep it aside for sometime.
To Knead the Flour for Samosa
- Add salt, and water in a pan and keep it on the gas stove. Boil it lightly.
- When it gets boiled, then put flour and ararout in it. Mix it well. Cook on light flame.
- When the mixer starts gathering with the mixture, keep it off from flame and keep it aside to let it get cool.
- Now it is the time to make small-small pieces of this. Pick one piece and roll it to the extent.
- Make its edges wet with little water. And cut it half from the middle.
- Now bend it in the circular direction (like the cone). And fill it with the stuffing.
- Now close it from the top of it. Turn it off from above. In meanwhile, put some ghee in a pan and keep it on the gas.
- When the oil gets enough heated, put 3 to 4 pieces of samosa in it (you can put some more or less according to the size of your pan).
8 Fry the samose till they turn to golden brown color. (For more crispy and crunchy, you can fry them little more).
But make sure to remove as soon as they turn golden brown.
